Cooking: Quick and Easy Steamed Egg Custard

Something you make for someone sick: steamed egg custard. Looks easy, but getting it perfectly smooth and pretty is actually kind of hard.

Ingredients: oyster sauce, salt, water, two eggs, scallions, soy sauce
- Put a tiny bit of oyster sauce in a bowl, add a tiny bit of salt, then add water and stir it all together
- Get another bowl, crack in two eggs, and beat them well
- Pour the oyster-sauce water into the beaten eggs. The ratio should ideally be 3:1 — 3 parts egg, 1 part oyster-sauce water
- Stir it a bit more, then grab a pot, add water, and bring it to a boil
- While it’s heating up, chop some scallions, as fine as you can
- Once it boils, put the egg mixture in to steam over the water. Keep the heat low, and don’t put the lid on tight — leave a gap, or the custard will puff up and turn into honeycomb
- About 10 minutes and you’re done. Add your chopped scallions, drip in a few drops of soy sauce, and it’s ready to eat
I didn’t add scallions, because the person eating it absolutely refuses to have them.
