Margherite Cookies

Easiest cookie I’ve ever made, and it tastes the best too.

Same short list of ingredients as always, just a couple more:

  • Hard-boiled egg yolk
  • Cake flour
  • Butter
  • Cornstarch
  • Powdered sugar
  • A small pinch of salt

Mix it all together and knead into a dough. You can make it a little on the firm side, then stick it in the freezer.

Take it out half an hour later, divide it up and roll into balls.

Like the first one there — press each one down flat with your thumb. That’s where the name “Margherite cookie” comes from.

Into the oven at 170°C (340°F) for about 17 minutes. Let them cool and they’re ready to eat.

Salty-sweet, crumbly and crisp, and they smell great. Plus they’re easy to make — I highly recommend them.
