My Personal Experience Making Mousse Cake

I’ve made mousse cakes quite a few times, and honestly most of them weren’t really up to my own standards. People eating them said they were fine, but there were a few things I knew needed work.

  1. Texture — sometimes too firm, sometimes too soft. The setting part is a pain to control.
  2. Flavor — if you use milk it tends to be too firm, because milk has way too much water.
  3. Time — making a mousse cake is time-consuming, and if you can’t manage your ingredients well, you won’t be efficient.

So after summing things up, I’ve got some experience now, and I can make cakes I’m fairly happy with.

  1. First, for the cookie base, Oreos aren’t as good as plain digestive biscuits — with Oreos you have to scrape out the cream yourself, which is a hassle.
  2. Next, use gelatin sheets whenever possible. Soften them, fish them out, and melt the sheets into a gel-like liquid. Don’t melt the sheets in water — no water, no water, no water.
  3. The good thing about gelatin sheets is you can control the amount easily, like using two sheets each time.
  4. For ingredients, use small bottles with fixed capacity where you can — around 200ml of heavy cream, around 200ml of yogurt. That’s ideal. One bottle each time, simple and quick to mix.
  5. I recommend yogurt mousse, not milk. Milk has too much water and you’d have to remove it yourself; yogurt you can just use straight.
  6. Yogurt chocolate mousse can take a tiny splash of baijiu — any baijiu will do, just a drop. Matcha yogurt mousse doesn’t need it.
  7. Finally, the layer of powder on top must be sifted on.

Basically, if you get the mousse liquid right, it’ll set in the top of the fridge and won’t melt again.

If you accidentally mess up the water removal, just put it in the bottom of the fridge, freeze it into ice cream, and eat it. Don’t waste it.

By now I can reliably make mousse cakes I’m more or less satisfied with. I guess that counts as a win.
